Sunset Yellow is synthetic yellow AZO dye that comes with pH dependent maximum absorption limit between 480 and 500 nm and is produced using aromatic hydrocarbons from petroleum. It is suitable for use in fermented foods requiring heat treatment and when used in combination with amaranth, it helps in producing brown coloring for chocolates and caramel.
